It's a lovely day for a salad

It is such a lovely day today in Rockhampton.  The sun is shining, there's a beautiful cool breeze and it's a nice relaxed day.  It's Anzac Day so no work or uni today and we all had a nice sleep in this morning.  I've been sitting on the patio scrolling recipes and decided to make myself a nice lunch of Mexican tuna salad.  I made this a few weeks ago after seeing it on TikTok and it was so tasty and fresh.  I had picked up some finger limes on my way home from Yeppoon the other day so I popped one of those in as well.  It's just a drained can of tuna, black beans, corn, celery, cucumber, Perino tomatoes, red onion and the finger limr mixed with mayo and salt and pepper.  I would have added a couple of slices of diced jalapenos but someone are the last of them and didn't put it on the shopping listn. I had it with crunchy fresh celery sticks but it is amazing with Splash of Lime Tostito chips.

We've got a couple of resident frogs which is amazing.  I love frogs, they're so cute.



We also have quite a few passionfruit on the way.  It's funny how your tastes change as you age.  I was never a passionfruit fan but I love the flowers but I'm starting to enjoy the flavour now 



I also have a pomegranate growing which I've been waiting FOREVER for it to ripen.  I think it will be ready to pick in a few more weeks.  Here's hoping it's okay on the inside and not full of ants.
